In English, Guardian del Bosque means ‘Guardian of the Forrest’
Carloman Carranza’s farm is located near the town of Gracias a Dios in the Amazonas region of Peru. The geisha is washed and de-pulped, before being fermented for 72 hours. It is then washed three more times before being placed in a solar dryer for upto 25 days. The whole process is monitored with a digital hygrometer and it is this dedication to quality that is so evident in the cup. The coffee is floral, delicate and fragrant. Full of sweetness and almond, with a soft body and peach acidity.
